Karen Petersen is a food writer living in Santa Cruz, California. She owns “Lean Chef”, an educational endeavor that helps healthy people balance food, fitness, and the overflowing plate of daily responsibilities. She teaches cooking classes, using the low fat and nutrition-packed recipes she has created, and is writing a health and fitness cookbook. She studied Personal Training at Foothill College, has run dozens of races including a marathon, and played a myriad of sports. She is also a NESTA Certified Personal Fitness Chef.
